Overnight Oats 3 ways

We all know that breakfast is an important part of a healthy lifestyle for both kids and adults. Multiple studies show that kids who eat breakfast:

  • display better behavior
  • score higher grades in school
  • have overall better nutrient intake
  • experience better weight control

Back-to-school time often puts an increased pinch on morning time. Most families need quick, make-ahead ideas to have on hand to grab and go for a quick, nourishing weekday breakfast. This is a super-easy idea that takes just a little prep time over the weekend and you can have breakfast ready for the whole week.

The basic recipe starts with combining the following in an 8 ounce mason jar or other container with lid:
• ¼ cup old fashioned oats
• 1/3 cup milk
• ¼ cup Greek yogurt
• 1 tsp. chia seeds

Add 1-2 tsp. sweetener of your choice (honey, maple syrup, fruit spread) and shake well to combine. Add ¼ = 1/3 cup fruit and stir. Refrigerate overnight or even a couple of days.

3 of my favorites (recipes credit www.theyummylife.com):

1. Raspberry Vanilla
• 1 Tbsp. raspberry jam (all-fruit spread)
• ¼ tsp. vanilla extract
• 1/3 cup fresh raspberries

2. Cocoa Banana
• 1 tsp. honey
• 1 Tbsp. cocoa
• ¼ cup sliced banana

3. Blueberry Maple
• 2 tsp. maple syrup
• ¼ cup fresh blueberries

Enjoy! And Happy Back to School!!

Banana Bread Banana Oats

Last night, Anthony’s parents gave us a few slices of homemade banana bread…one of my favorite. things. ever. As we were driving home, I was already imagining creating a yummy breakfast this morning.

Another one of my favorite things is being inspired by food bloggers with new meal ideas….yesterday morning, Kath had a delicious-looking breakfast of oats topped with a Massive Monster Muffin, so when Anthony’s parents gave us this banana bread, I started imagining a warm and creamy bowl of banana oats topped with crumbled banana bread….yum.

Homemade banana bread…it was full of walnuts and even had a few raisins…

Crumbled on top of banana oats with a bit of crunchy almond butter….

This was a very good combo- it needed maybe a little more crunch, so next time, I might add some walnuts on top and extra raisins…but, overall a delicious and filling warm breakfast on a gray and cloudy day.

We’re off to church- I have the pleasure of working in the Toddlers class again. 😉 Should be a fun morning.

Have a great Sunday!

Black and Blue Oats

Good morning!

I started today with one of my favorite bowls:

  • banana oats
  • dark chocolate chips
  • blackberries + blueberries
  • crunchy almond butter

I hope you have a great Thursday ahead….I’m rushing off to work….See you later!

Beautiful morning

Good morning! It almost feels like fall here today…there’s a bit of a chill in the air. I love it!

Breakfast was banana oats topped with dark chocolate, strawberries, and almond butter…perfect.

Today should be a relatively calm and fun day- I have a few nutrition consults and boot camp this afternoon! I have to enjoy these next two Monday nights because in two weeks our Monday night weight loss class starts back for the fall.

How is your Monday? Have a great day!

Energy Bowl

Good morning! After getting home late last night and getting about 5 hours of sleep…a good high-energy breakfast was definitely on the agenda. In the ” bowl”:

  • banana oats
  • dark chocolate chips
  • blueberries
  • crunchy almond butter

Perfect start to my day…which, luckily, shouldn’t be terribly mentally demanding. I have a couple of meetings and plan to spend the rest of the day in “catch-up”, planning, and continuing education mode. My CDE (Certified Diabetes Educator) credential is set to be renewed next month…and I still have quite a few hours of continuing education to catch up on.

I had a couple of questions yesterday about my Rock Bottom class, which unfortunately, I didn’t end up getting to teach (but I’m so thankful I found someone to sub for me so I could be with Anthony and his family).  Rock Bottom is basically a 30-minute strength training class that focuses on legs, abs, and core. I like to do a variety of squats, Bosu squats, lunges, walking lunges, dead lifts, “fire-walkers”, and lots of different abs/corework. Great class- and I love that it is only a quick 30 minutes!

Can’t wait to catch up with all of you later today! Hope your Wednesday is great!

Simple, Healthy Eating

Don’t you think we sometimes make eating healthy too hard? I do. Counting calories, counting carbs, counting fat….don’t eat these foods, eat less of this, more of that, read your labels, weigh, measure….there’s definitely a place for all of those things, but sometimes, I think we need to relax and approach healthy eating in a more  simple way.

I awoke to a 5:10 am alarm clock this morning…made it to the gym to teach a 6 am Sculpt class…now I have to stay mentally prepared for 2 more classes this afternoon. After class, breakfast was a simple bowl of banana oats, topped with dark chocolate, berries, and almond butter. Simple and perfect.

Some of the simple tips I try to follow when it comes to healthy eating:

1. Eat more fruits and vegetables – especially darkly and brightly colored ones.

2. Drink more water.

3. Eat breakfast.

4. Eat healthy monounsaturated and Omega-3 fats.

5. Eat slowly and mindfully, paying attention to hunger and fullness cues.

What are some healthy eating tips that you try to live by?

Have a great Tuesday!

Happy Birthday Anthony!

Happy Birthday Baby! I love you!

We each had a birthday bowl of chocolate banana berry oats…Now, I have to run out the door to teach an early morning diabetes class. Love you honey…see you tonight!

Have a great Thursday everyone!
