Asian Chicken Pasta Salad


8 ounces whole-wheat penne pasta

8 ounces broccoli florets

1 pkg. Tyson oven roasted diced chicken breast (or fresh grilled chicken)

½ cup chopped carrot

1 medium red bell pepper,diced

4 green onions, sliced thinly

½ cup chopped roasted peanuts

¼ cup chopped fresh cilantro

¼ cup Newman’s Own light sesame ginger dressing


1. Bring 2 quarts of water to a boil. Cook pasta according to package directions. Add broccoli the last minute of cooking time. Drain pasta and broccoli thoroughly and set aside to cool.

2. Combine diced chicken, chopped carrot, diced red pepper, sliced green onion, chopped peanuts, and chopped cilantro. Add cooled pasta and broccoli. (Can be covered and refrigerated for up to several hours at this point).

3. When ready to serve, add dressing; toss to coat and serve.
