Back to School

I had so much fun going back to school this morning. I felt like a college student again walking across campus.

Since Starbucks is so close to campus, I “needed” a tall latte on my way to class 🙂


I had a great time talking to the dietetic interns about bariatric surgery…the discussion included…

  • United States Obesity Rates
  • Morbid Obesity and BMI
  • criteria to be considered for bariatric surgery
  • the 3 types of surgery that our surgeons perform….gastric banding, gastric bypass, and gastric sleeve
  • Nutritional guidelines following surgery
  • long-term follow-up

It was a fun class and I really enjoyed being back on a college campus. And, I’ll look forward to seeing the interns again when they begin their rotations in January.

After the lecture was over, I had to hurry to the hospital to see a diabetes nutrition consult…it was already nearly noon and I hadn’t had time for lunch so I grabbed a smoothie to hold me over- a chocolate shredder + banana. This was so good and so filling – I wasn’t hungry again until 2:30.


After my diabetes consult, the rest of the afternoon was spent catching up on charting, paperwork, and preparing for tomorrow’s presentation, “Lifestyle Changes to Improve your Cholesterol”, that I’m doing for a local business’ wellness program. During all of that, I had a late lunch from the hospital cafe…grilled cheese sandwich + small salad.


Gotta run- laundry and dishes are calling my name….I’m looking forward to a quiet night at home and Anthony and I want to get a walk in later….still have to figure out what’s for dinner…Any easy, quick dinner suggestions?? For some reason, I don’t have any real inspiration for what to have tonight.

  1. I always make “healthy” fried rice! I cook brown rice, and vegetables. I add the veggies to the mix! If you want you can add chicken or butter! thats why I am having tonight.. sometimes I mix the rice and an egg and cook it in the micro.. then mix it up! it’ll take like 2o minutes TOPS!

  3. Grilled cheese w/tomato and lettuce sounds fantastic. I never do that. What a great way to get your veggies in.

  4. Anything but that blue boxed, processed cheese nonsense :).

    Shrimp is always a good choice when you’re not feeling it. Cooks fast, good for you and tasty!

    Saute garlic until fragrent, add shrimp and cook until pink throughout and a minute before it cooks, deglaze with white wine. 5 minutes max 🙂

    This post made me miss school, campus, going to classes, readings, everything. 😀 The grilled cheese sammie looks so inviting.

    Veggie scramble or a big salad for dinner is quick and healthy.

  7. We quickly cooked up some tacos tonight… sauteed some onions, garlic, tomatoes with cumin, chili powder and cilantro… topped with corn, low fat refried beans, etc, etc… was very good!

    Sounds like you had a great presentation!

    I have never had the Chocolate Shredder at Smoothie King! It sounds yummy, though!

    That grilled cheese looks so yummy! 🙂

    And um… Starbucks is always “needed”… haha!

  8. Tonight I made mock fish tacos! It’s my new thing, with salmon, yum.

    So you will be having interns in the winter? That’s so exciting. I have always thought it would be so nice, and FUN to have dietetic interns (of course, I need a job first). I bet they were so happy when they saw that you would be their proctor! I could always tell right away whether I would like my proctor or not, and I was usually right! Glad the talk went well 🙂

  9. I looooove love love Smoothie King – so wish we had one here in Oregon.

    My go-to meal for fast and easy is usually something with chicken…maybe pasta….good luck!

  10. That discussin you had about bariatric surgery would have been so interesting! I’m really not sure if I’m for or against people having that surgery.

    Oh geez, dinner suggestions? I need some too, lol.
