Word of the day: Simplicity

One of my goals for a long time now has been simplifying my life. Sometimes I’m pretty good at it, sometimes not so good. But, my goal is to focus less on stuff, less on busyness, less on always doing and having more, more, more. I also love simplicity in food.

Today’s lunch was simple, but delicious – grilled chicken, lettuce, tomato, and provolone on a whole-wheat wrap from our hospital cafe. I got to have lunch with Anthony which was a bright spot in my day (+ a few of his fries!)…


Afternoon treat – tall vanilla latte – it helped me make it through boot camp this afternoon!


After work and boot camp, I headed home. Since we were out of town this weekend, we haven’t gone grocery shopping, and we didn’t have a plan…which meant an afternoon grocery store run…still, dinner was simple, but very good…grilled balsamic chicken, baked sweet potato, and roasted broccoli.


What are some things that you do to simplify your life?

My goal tonight is early to bed…there was a mistake with my aerobics class schedule, and somehow, I ended up scheduled to teach a 6 am Sculpt class tomorrow morning + a one-hour Sculpt class + 30 minute Rock Bottom class tomorrow afternoon!! I’m going to make it work, but I know in advance that I will be exhausted, so my goal is to get a good night’s sleep tonight and start the day well tomorrow….definitely not a good “simple” day….

  1. I was in the same boat as you, but I am trying to use up what I have before shopping – should be an interesting week – not sure my husband will be happy with what I come up with though!

  2. Thanks for visiting! I’m so glad we share the same viewpoint on a healthy appetite and how important exercise is!

    I always try to look for what deals they have in the salad section of the grocery store. Sometimes the pre-chop/washed stuff is cheaper than the unprocessed stuff which saves me some trouble in dishes and cutting!

  5. What a great looking meal. The sweet potato looks so good and full of bursting lavor. I had sweet potato fries tonight, with a bit of ketchup. I had prepared them about three days ago and frozen them in the freezer. I just popped them on the pan, at 400 degrees for about 10 minutes. SIMPLE! 🙂

    I try to simplify my life by planning fewer activities, especially on the weekends.

    Get lots of rest; sounds like tomorrow will be a really demanding day!

  8. Yay simple stuff! I try to simplify my life by consciously recognizing stress factors in my life that I can do nothing about: worrying about my sister, feeling annoyed with my brother’s “easy life”, etc. I now see that it drains me of energy and doesn’t solve anything, so I tell myself to let it go! I also find creative solutions for nagging issues – why keep complaining when you can fix something?

  9. you’re a busy bee! love baked sweet potatoes! They have so much more flavor that regular potatoes. Sometimes I get caught up in it all too, and I try to take a step back and realize the simple things in life 🙂
