Dreaming of the Tropics

I am so excited! We just booked our 1-year anniversary trip to Punta Cana, Dominican Republic! It is two months away, but I love looking forward to a vacation and counting down the days…I cannot wait.

Today was a good Friday – I had some diabetes nutrition consults and I caught up on a lot that I missed while we were in our Customer Service Excellence training this week. And some excitement -my friend, a dietitian in our department, Whitney, had her baby Claire today. I am so excited for them…Congratulations Whitney, Brent, and big brother Barrett!

Lunch was delicious leftover spaghetti from Anthony’s birthday meal last night…plus an amazing garlic roll.


After a busy afternoon at work, I headed to the grocery store to pick up a few things. I had this new bar on my way…this was my first time trying it and I totally loved it…great flavor, very candy-bar taste…dark chocolate and almonds…what’s not to love?


Tonight, Anthony and I have both been working around the house…mowing the lawn, laundry, cleaning…and I still have a dog bath on my agenda. We’re trying to get everything ready to go on our weekend getaway tomorrow…whitewater rafting and a stay at a Bed and Breakfast for Anthony’s birthday. I’m so looking forward to it. Dinner was homemade pizza on whole-wheat naan…I had these two slices + one more pesto slice…delicious!

  4. That is quite a serene scene. My cousin just returned from the Dominican Republic and showed me picture after picture of waterfalls, and she and her friend jumping into them. It looks like such an amazing place.

  5. I went to Punta Cana a few years ago a loved it! It is beautiful there!
