Veggie-ful Day

Hey everyone! I hope you’ve had a good Wednesday. Today was a busy day at work as usual.

Lunch was a quick leftover steak salad at my desk – simple and delicious!


Anthony and I had a garage door malfunction this morning – he was already on his way to work, and when I prepared to leave home – the garage door wouldn’t open…I tried everything. Poor Anthony had to come back home to save me! Well, the “spring” was broken and we still couldn’t get the door open….my car was trapped inside all day. Luckily we work fairly close to one another so we did a little carpooling today. Hopefully the garage door will get repaired tomorrow – and maybe this was a good reminder that we need to carpool more often.

After work, I was hungry and snacked on some yummy chips and salsa….


We had a little later dinner inspired by our weekly meal plan….well, I actually switched Wed. and Thurs….but it made this week so much easier having a plan! Tonight was Chicken and Veggie Curry….easy, easy meal. I used Trader Joe’s yellow curry sauce and this new Kashi whole grain pilaf….


The Kashi whole grain pilaf was so good – it contains whole oats, long grain brown rice, rye, hard red winter wheat, triticale, buckwheat, barley, and sesame seeds – that’s it…no preservatives or ingredients you can’t pronounce! In a one-cup serving, it also has 8 grams of protein, 7 grams of fiber, and zero sodium….plus it heated up in the microwave in 90 seconds…I’ll definitely purchase this again! So, for dinner, I sauteed some chicken breast…added a bunch of onion, green pepper, and broccoli….


Plus the yellow curry sauce and served with whole-wheat naan…delicious and only took about 20 minutes start to finish! I love one-pot meals like this that use some convenience ingredients but are still tasty and healthy!

Now, I have laundry and dishes going, and I’m off to relax with my sweet husband – I have an early morning meeting tomorrow, so hopefully I’ll see you with a quick and early breakfast post.

  1. Those are the type of dishes that I LOVE throwing together fast. I use a lot of rices (brown, wild) and cooked veggies (broccoli, mushrooms, onion) and then chicken or turkey, sometimes red meat, and throw it all together! It never turns out pretty, but always delicious.

    Oh, and I LOVE sweet potato fries. Those would be good crumbled on a quick dish too, for nice nice crunch!

  2. I tried that curry sauce the other day; it’s good! 🙂

    I love quick stir-fry type dishes. I also like simple pasta dishes with a quick sauce: sauteed garlic, tomatoes, basil & some cheese for example. With a quick salad, that’s one of my perfect summer meals!

  3. I love your go-to dinner…quick and so full of veggies. I’ll have to try it because right now my quick-dinner nights usually revolve around pasta. I’d like something different and a little lighter!
