Countdown to Music City

I hope you’ve had a good Wednesday!!

I had a busy but productive day at work. I spent the morning seeing a diabetes nutrition consult and working on a newspaper article on “Healthy Eating on a Budget”…for some reason, I had a hard time completing this article…but I did get it done and submitted! While I completed the article, I snacked on some fage yogurt with granola and a drizzle of honey at my desk. This was so filling!!


Lunch was leftover steak +spinach salad….


I had a fairly quiet afternoon at work, which is unusual. I spent it catching up on paperwork and completing some continuing education on diabetes (I’m such a procrastinator- I’m required to have 75 hours of continuing education by September- as of today, I have about 48 hours completed!).

On the way home from work, I had a little treat…


Tonight is our weekly newlywed group, so dinner needed to be quick + easy….it was inspired by this yummy sauce…


Mixed with sauteed chicken, broccoli, onion, and green pepper – served over rice and with a side of naan….this meal was so quick and easy and delicious!


After dinner, we headed to Tom and Anita’s for our newlywed group. Tonight’s topic was about communication in marriage- knowing when to speak and when to be quiet. I have to say, I could definitely learn to be quiet more! I am so lucky to have an amazing husband who listens and listens even when I ramble on…..

We had a delicious snack of fresh apples and pears, peanut butter stuffed pretzels, and Tom and Anita’s special coffee…a perfect treat.


Now, after a bit of America’s Got Talent – I need to get myself into bed…the procrastinating begins again – 10 pm is usually when I get my late burst of energy! I have to learn to get in bed earlier!!

We are going to Nashville this weekend- I’m so excited to visit Michael…and it also means a trip to Trader Joe’s! I’m counting down already!

    The meal sounds very simple-must try it out on days when I don’t feel like dishing up something very elaborate 🙂

  4. Ha! This was a topic of discussion w/hubby tonight. The REASON you had trouble writing about healthy eating on a budget is because it’s DANG hard to eat healthy on a budget. Hamburger Helper is stinkin cheap. That’s so wrong, too…

  6. I agree that writing an article on how to eat healthfully on a budget would be tough. It isn’t an easy task because things are so darn expensive!
