Bed, here I come….

Today was a busy, non-stop day and I am happy to be home finally!

This morning started with a Gastric Banding Nutrition Class which prepares patients who are getting ready to have Lap Band or Realize Band surgery. It is a fun class to teach because the patients are so excited about their upcoming surgeries and are really in “life-changing mode”….it can be very inspiring. Then, I worked at the Wellness Center on preparing for weight loss class tonight – tonight’s topic was Meals that Work. Sometime in the middle of that, I had this delicious salad from a nearby restaurant salad bar…It was delicious! I made the salad purposefully HUGE so that I could have leftovers for dinner tonight.

  • mixed greens + spinach
  • grape tomatoes
  • cucumbers
  • edamame
  • feta
  • hard cooked egg
  • red onion
  • bacon crumbles
  • dried cranberries
  • yummy pumpernickel croutons
  • cucumber and onion salad
  • broccoli salad

DELISH! I ate about half and put half in the fridge for later. The afternoon flew by as I worked on ideas for weight loss class…Before I knew it 4:30 had rolled around and it was time for boot camp!! Woo hoo! We did everything from jump-roping, burpees, mountain climbers, heavy rows, plyo-pushups, squat jumps, reverse lunges, planks, curl and press, Turkish get-ups (oh my gosh!), and finished with some medicine ball drills and sprints…I was dripping sweat at the end.

And, I needed a little snack before weight loss class. This is my last 5-seed almond bar from TJ’s with some peanut butter….I forsee another trip to Nashville in my future to stock up at Trader Joe’s.

Weight Loss Class was great tonight. We had a good turnout and discussed some ideas for better meal planning. The class had great comments and it was an awesome discussion. Also, one of our participants just hit her 50-pound weight loss mark! So exciting- we really teach and promote a slow and steady approach to lasting weight loss- and it has taken this lady about a year and a half- but she is pretty much at her goal weight and is so healthy and fit- it is very inspring…and exactly the reason I do my job.

I finally got home at 8:30 and my sweet husband put together this yummy, quick dinner….small pimiento cheese sandwich, small chicken salad sandwich, leftover salad from my lunch, the last few Food Should Taste Good chips (sweet potato and multigrain), and some fresh fruit…this is one of my favorite types of meals…perfect.

Now, I am in major need of a quick shower and some relaxation time before bed. Goodnight!
