I had a full and busy morning. Volunteering in the toddlers class at church is always fun…and often a little crazy. Right after church was over, I hurried to get to the wellness center to work a manager-on-duty shift from 1-3…we go in for a couple of hours and make sure the lifeguard and fitness staff get their lunch breaks. So, on my way to the wellness center at 1:00, I picked up a Banana Chocolate Vivanno from Starbucks…a perfect snack on a hot summer day.
After leaving the wellness center, I got home around 3:30 and I was starving, so I threw together ham, cheddar, and tomato on a whole-wheat tortilla with some garden-fresh tomatoes and leftover black bean, corn, and feta salad with Food Should Taste Good chips….
And, I spent most of the afternoon just lazing around on the sofa…it was so nice to have some down time. Anthony cut up this beautifully ripe watermelon that he picked up at the grocery store…and I stood there eating right off of the cutting board….
He was so productive, doing laundry, washing sheets, while I relaxed…I have such a great husband. Later, he baked a cast iron skillet of homemade cornbread…yum!
Which inspired my simple dinner…I wasn’t in the mood to really cook…so I tried a version of Cornbread Salad. My mom made this a few times and it was so good, but I didn’t really have a recipe…so I layered…crumbled cornbread, drizzle of ranch dressing, fresh tomato, cucumber, and red onion….it turned out really well and was a great simple meal….I may play with changing the recipe up a bit next time.
Now, I’m headed back to the couch for the Next Food Network Star…I always love that show!
