Lazy Day

Hey everyone!! Hope you’ve had a great Sunday so far! Mine has been lazy…exactly as I prefer.

Breakfast this morning was pumpkin butter oats- oats with a tablespoon of pumpkin butter stirred in while they cooked- topped with dark chocolate chips, strawberries, and almond butter. I had never tried pumpkin butter in oats before, and it turned out great!

Then, we had church and I volunteered in the toddlers room- fun as always. Lunch was at a great little casual pizza/Italian restaurant…I had a grilled chicken Greek salad – it was delicious.

Thanks for the comments on last night’s post…here’s Anthony’s super easy mini apple pie recipe – so easy!!

2 granny smith apples, peeled and quartered

2 cups orange juice

1 cup sugar

1 tsp. cinnamon

1 package refrigerated crescent rolls

real vanilla bean ice cream

In a saucepan, bring the orange juice, sugar, and cinnamon to a boil, add the quartered apples, reduce heat and simmer for 5-10 minutes, or just until apples are tender. Preheat oven to 375…on a baking sheet place one crescent roll – top with an apple quarter and wrap the roll around the apple.  Repeat with all of the crescent rolls and apple quarters. Bake until golden brown. Serve with a bit of the reserved sauce (OJ and sugar) and scoop of vanilla ice cream.

  1. Wow, that looks awesome. I love apple pie, and making them mini is great because then I can’t have three pieces!

    I always order Greek salads when they are on the menu. I especially love them with feta, chicken, kalamata olives, and artichoke hearts, YUM!
