Happy Father’s Day to my dad and Anthony’s dad, Jim. We are so lucky that we got to spend the evening with our families tonight.
We had a beautiful and delicious meal. I had a tenderloin steak, cooked perfectly medium rare by Anthony, baked sweet potato, roasted veggies, and a Greek salad.
And, Anthony grilled a couple of the famous shark steaks…I had a couple of bites just to taste. We marinated them in a marinade of olive oil, lemon juice, fresh ginger, garlic, and soy sauce….and guess what? It was really good. Very mild in flavor and a little flaky, not as steak-y as tuna steaks…but a really good texture. We still have a few more in the freezer…so they’ll be on the menu again soon.
And, Anthony made these yummy individual “apple pies” for dessert with a little vanilla bean ice cream…the perfect ending to a delicious meal!
Hope you’ve had a great evening…Our parents have already hit the road and I’m looking forward to relaxing a bit with my sweet husband.
