Dinner Inspiration


I picked up this bruschetta topping at Trader Joe’s yesterday and it was my inspiration for dinner tonight…I also wanted something easy and relatively quick.

And added some whole wheat 4-cheese ravioli….


Then topped the cooked ravioli with some sauteed chicken breast, marinara sauce, and some fresh basil and crushed red pepper- I usually add crushed red pepper to all of my tomato-based dishes.


I added a salad and two slices of garlic bread- one with the bruschetta topping (really good – but a little oily) and one with my favorite pesto.


Perfect dinner! And after dinner- Anthony brought me a little bowl of Belgian chocolate chunk ice cream…perfect ending.


I’m off to bed- still haven’t caught up on sleep and I have a relatively early morning in my future.

  6. I love your yellow place settings. Very pretty. Pastel yellow ceramics are a favorite of mine.
    Oh yes, about the food… do you measure or weigh your serving portions, in particularly, the main entrees?

    Your servings always seems to be appropriate and not too big.

      I actually don’t measure or weigh at all- I try to tune into my hunger and fullness cues and gauge how much food I need- however, I never hesitate to leave food on my plate or save it for later. Thanks for a good question!
