Economic Summit for Women

This is how I started my day…I was there representing our Weight Management Center and I really enjoyed it.

The day started with a fabulous presentation by Judge Angelita Blackshear-Dalton – oh my gosh – she was a great speaker to start the day. Her topic was “Being the BEST for the TEST”….She spoke about setting goals and dreaming big. Very inspiring.


And, then my fabulous co-worker, Cheryl, led us in an excellent de-stressing break. Cher is a fabulous yoga instructor and is so great at calming and leading mindfulness exercises.


Then, I attended a great discussion led by Adina Chumley on “Twitter This: Building Social Capital in a Hi-Tech World”.  It was a great presentation about marketing yourself and branding yourself online. I haven’t really gotten into Twitter yet…I know some of you twitter….I’d love to hear your thoughts….


So, overall I had a great morning and really enjoyed the presentations. I also got to network with some people and share what we do through our weight management center.

The conference was going on all day, but I had to leave at lunchtime to go back to my office….Lunch was another yummy salad….


Today’s mix:

  • mixed greens, spinach
  • grape tomatoes
  • red onion
  • green pepper
  • lots of edamame
  • strips of beets
  • cucumbers
  • dried cranberries
  • sunflower seeds
  • pumpernickel croutons
  • balsamic vinaigrette
  • cucumber and onion salad
  • small bit of broccoli salad

YUM! So delicious and healthy!

Then, later, Anthony’s mom Jean came over for dinner. We had spaghetti….on my plate is spaghetti with a bit of tomato/meatsauce and basil pesto on top…and a piece of garlic bread with pesto too!


So, these were my two meals mixed into a busy day….It seems lately I have been running non-stop….hope my meals inpsire you that healthy eating is possible even in the middle of a busy life…

Now, off to bathe the dog and work on packing for our beach trip.

My lifelong dream has been to write a book…but until 4 months ago I have never had the courage/confidence to share my writing publicly — so afraid that people wouldn’t like it.   3. I truly love nutrition conferences, especially when the speakers are really passionate about the topic. Regarding the twitter, I’m not into it, and I made Nick promise me never to get involved! I don’t want my computer and the internet to rule my life, and I really don’t care what everyone is doing at all times of the day. I dunno, it’s just not for me.

    Again, love the salad, so eclectic! And beautiful 🙂

  4. I agree! The presentations sound terrific. I wish I could hear the judge’s presentations.

    Twitter is fun, and I’d be on it more if I had an Internet phone that made tweeting easy. I have to update via my computer, which is more time-consuming and doesn’t have that instant gratification. I don’t sit in front of the computer all day in my personal time waiting for someone a response! The real-time effect of Twitter is what makes it impressive.

  7. Thanks for attending the Summit, Angie! I was so INSPIRED by the speakers. Great turnout, too!

    Meanwhile, I can see you “twittering” great nutrition advice (with links back to your blog/recipes) to your “followers!” It’s about relationships, sharing and learning from each other.

    Eventually, I’d like to ramp up with a text-savvy cell phone. Right now, my old Verizon stand-by is so “last year.” 😉
