“No Plan” Dinner + Dessert

Tonight (again with the no planning), we didn’t really have dinner planned…so we decided on soup and sandwiches. I pulled this package of broccoli cheese soup mix from Target out of the cabinet to try.

I’ve never made soup from a package…but for a quick meal, this turned out well. Simply mix with water, bring to a boil and simmer….

And then I added about a cup of chopped broccoli to pump up the flavor and nutrition….

Add a tomato and avocado sandwich and my quick and easy “no plan” meal was complete…

We also had newlywed group at Tom and Anita’s, so you can be sure I got my weekly fix of a yummy coffee and a delicious dessert creation courtesy of Anita – tonight it was a cranberry white chocolate cookie. YUM!

I had one cookie and enjoyed every bite and the coffee was delish!

Time for a little more laundry and then bed…still counting down to the beach…2 more days to go!

  1. Great “no plan” dinner! The coffee and cookie look delicious… πŸ™‚

  2. Hey Angie, Amy and I make a similar soup, think it is Bear Creek Broccoli Cheddar but i like to use equal parts skim milk and water. Makes the soup alot creamier. I do the additional broccoli as well. Always comes out great.

  3. Yum, those are all my favorite foods – cheese, veggies and some bread!

  4. i LOVE soup + sandwiches, it is such a great combo! My favorite is grilled cheese and tomato soup πŸ™‚ Yum πŸ™‚

  5. Sometimes Dave also adds chicken and rice to the soup mix along with Broccoli, Mushrooms, and Onions – makes a great complete meal. Also, we buy the chicken in large quantity at Sam’s. Dave cleans, trims, and then individually wraps the breasts for freezing.. That way when we get home from work, you just pull one out of the freezer, into the microwave to defrost, then into the pan – it is a real time saver..
