Delicious Lunch + Food for Thought

What is up with my meal planning this week? I’ve not done well at all planning lunches in advance! By 11:30 this morning, I was so hungry and I was really craving a salad…so I went to a great restaurant with a salad bar and picked up my lunch:


Even without advance planning, it was a delicious lunch…In the mix:

  • mixed greens
  • baby spinach
  • edamame
  • grape tomatoes
  • cucumber
  • red onion
  • green pepper
  • chickpeas
  • hard-cooked egg
  • black olives
  • crumbled feta
  • sunflower seeds
  • pumpernickel croutons
  • green bean salad
  • tomato and cucumber salad
  • balsamic vinaigrette

SO GOOD! I enjoyed and savored every bite!

  2. That salad looks great! I love having lots of delicious toppings on salads. You can make a great meal that way.

  3. By December (right before I kickstarted my weightloss), I can’t even put words to the relationship I had with my body…it wasn’t good. I don’t think there was one body part I fully liked! It’s obviously improved much since then but there’s still some work to do 🙂

      Anais- Thanks for the comment. I think that it is a work in progress for each of us…every bit of improvement is a baby step in the right direction!
