I found this simple recipe for Greek Chicken Pasta today…I modified it a bit by adding spinach and kalamata olives, and it looked so simple and delicious that I had to try it tonight for dinner. I used this whole-wheat blend pasta. I like it because it has 7 grams of protein and 6 grams of fiber per serving.
I served it with a simple tomato and basil salad and one piece of garlic bread with pesto….this recipe was great because I was able to use my fresh oregano, parsley, and basil in tonight’s dinner.
The recipe turned out great. After dinner, I relaxed on the sofa with Anthony for a bit, and now, my goal is to get into bed early tonight (which for me is before 10:00)….Have a great evening.
