Basil + More Basil

I’m so happy to be home! Long day at work, but a good one. I taught a class tonight on post-gastric bypass surgery nutrition. It can be very inspiring to see how my patients are changing their lives. One lady shared that she had already gone down 3 dress sizes in just one month! The best thing though is when they are able to do things they couldn’t do before, like play and run with their children and just generally feel better overall, not to mention, they often no longer need medication to control conditions like diabetes and high blood pressure.

Late lunch at my desk was leftover steak salad.

I got home from work around 8:30 starving. I made a quick pizza with a whole wheat tortilla, tomato sauce, mozzarella, basil from our herb garden and topped it with basil pesto and crushed red pepper – it was really quick and delicious. I also threw together a tomato and basil salad with some balsamic vinegar and EVOO…simple and delicious!

  4. I love tortilla pizzas. I bake mine in the toaster oven for a few minutes to get it really crispy.
