These have been sitting in our fruit bowl for a week, and tonight I decided they would be my inspiration for dinner.
Along with: a little chopped onion, chopped tomato, salt, lime juice, and some fresh cilantro from our Aerogarden.
Which resulted in:
I also sauteed some chicken tenders with some onion, green and yellow pepper, and tomato. We piled that up on some whole grain tortillas for chicken fajitas…added some salsa and guacamole…yum!
And, a little treat after dinner…Belgian chocolate chunk ice cream.
