I love occasionally having breakfast foods for dinner. Normally, Anthony and I go out on Friday nights, but the weather was bad here and we were both tired after a long week – and we’re also preparing to go to Nashville tomorrow morning, so we decided to stay in tonight.
Anthony suggested omelettes, and that sounded quick and great to me!
One egg veggie and cheddar omelette, whole wheat toast with blueberry fruit spread, and a lime seltzer with a splash of Pom juice.
Perfect meal with just enough room left over for this belgian chocolate chunk ice cream a little later.
