One of my very favorites….

I have a long list of favorite foods: chocolate, dark chocolate, coffee, pizza, blueberries, and guacamole…just to name a few.

Tonight these beautiful avocados, red onion, limes, and cilantro were calling my name.

Easy way to remove the pit from the avocado: just gently tap with your knife and give it a little wiggle.

My favorite guac recipe:

2 avocados

juice of one lime

1/2 red onion, diced

one small tomato, diced

2-3 tablespoons chopped cilantro

salt and pepper to taste

one diced jalapeno (I didn’t have one tonight, but it was still good!)

I love that avocados have such a buttery, smooth texture. They are a little high in fat, but it is healthy, monounsaturated fat, so they’re a great part of a healthy diet.

We had leftover steak from dinner last night, so I sauteed some onion and tomato, added the steak to warm it up, and then piled it up on these great tortillas with 12 grams of fiber each…

A steak quesadilla, salsa, homemade guacamole, multi-grain chips, and an orange juice seltzer…the only thing that could make it better is a balcony overlooking the Pacific!
